成日覺得喺餐廳食靚扒好奢侈?其實自己買原條返屋企切,先至係最精明嘅選擇。呢條M1-2原條肉眼,嚟自澳洲安格斯牛,油花輕盈細緻,牛肉味純樸自然,冇多餘油脂,啱晒鍾意食肉味、又怕太油膩嘅朋友。
成條買返嚟,鍾意切幾厚就幾厚,想食幾大塊都得。計返條數,比逐塊買平一大截,仲要可以自己控制份量,食幾多切幾多,其餘原條擺返入冰箱,隨時有靚扒食。
點樣保存?
切好之後,唔好就咁求其掉入雪櫃。逐塊用食物保鮮膜包實,確保冇空氣走入去,跟手用標籤寫低日期。咁樣一排排擺好,想食嗰陣就拎出嚟,幾時都知邊塊打邊塊。唔使次次解凍成條,食幾多拎幾多,慳時間之餘,仲可以保持肉質。
原條買返嚟,自己切自己包,成個雪櫃都係你嘅私人扒房。抵食又方便,仲要係自己揀嘅靚位。
煮食貼士
安全簡單嘅解凍貼士
收工返到屋企發現唔記得解凍晚餐,諗住用熱水或者擺喺枱面解凍?唔得呀,唔安全!呢啲方法會令食物中毒。記住,肉類要保持在安全溫度解凍。凍住嘅時候冇問題,但溫度一旦超過4.4°C,細菌就會開始滋生。
千祈唔好就咁放喺枱面或者用熱水解凍,亦唔好擺喺室溫超過兩個鐘。即使中間仲係凍嘅,外層可能已經去到「危險區」(4.4 ~ 60°C),細菌會瘋狂繁殖。
最安全嘅解凍方法係提前計劃,用雪櫃保持在4.4°C以下。你仲可以用凍水或者微波爐解凍。如果趕時間,直接煮凍嘅食物都冇問題,只係時間會長啲。
雪櫃解凍:
要預早計劃,因為需要時間。原條西冷大約5kg,建議預早1-2日擺落雪櫃解凍。解凍後,可以喺雪櫃保存3-5日。如果切開咗嘅部分唔煮,可以原封放返入急凍,但質量可能會輕微下降。
冷水解凍:
如果唔記得早一日拎出嚟,可以用呢個方法。確保牛肉放入防水密封袋,浸喺凍水入面,每30分鐘換一次水。原條大約需要2-3個鐘。解凍後要即刻煮。
微波爐解凍:
最快但要即刻煮。解凍過程中,有啲部分可能開始熟,去到「危險區」,所以解凍後一定要即刻煮。
