Cooking
- At 1 Kg per piece, these are big steaks. Defrost in your fridge overnight then allow to get to room temperature for at least 2 hours.
- Season with plenty of salt & pepper, sear in a hot pan for 2 minutes on each side then roast in a hot oven (180 C) for 10 - 15 minutes.
- Rest for a further 15 minutes then carve off of the bone and slice each piece and arrange back around the bone.

Differences Between Porterhouse & T-Bone Steaks
Iconic Cuts:
Both porterhouse and T-bone are iconic American steak cuts.
Short Loin Origin:
Both come from the short loin, located between the ribs and sirloin sections of the cow.
T-Shaped Bone:
Both feature a T-shaped bone, contributing to their tenderness and marbling.
Porterhouse Composition:
Porterhouse is cut from the rear end of the short loin, containing a larger tenderloin (filet mignon) and a strip loin (New York strip).
T-Bone Composition:
T-Bone is cut from the front of the short loin, with a smaller tenderloin and a similar-sized strip loin.
Filet Size:
Porterhouse has a larger, thicker filet compared to T-bone.
USDA Standards:
Porterhouse must be at least 1.25 inches thick; T-bone must be 0.5 inches thick.
Quantity per Animal:
Each animal yields 6-7 T-bones and 2-3 porterhouse steaks.
Serving Size:
- An 18oz T-bone serves 1-2 people
- A 24oz porterhouse serves 2-4 people.
Classification:
Every porterhouse is a T-bone, but not every T-bone is a porterhouse.
Preference:
Both cuts are loved for their tenderness and beefy flavor.
