了解部位
肉眼是來自哪個部位?
肉眼牛扒,是我們所有扒類中最受歡迎的一個部位。我們的牛肉所採用的黑毛安格斯牛隻都是放養、穀飼的,這不僅保證牛扒的味道,而且不含激素和抗生素,而穀飼牛以穀物為主要飼料,圈養喺牛棚中,冇得自由活動,所以肉質會比較肥美鮮嫩。
肉眼來自牛的胸脊與肋骨之間的肌肉(Cube Roll),佔身體的 2.8%。由於肌肉的活動量不大,所以非常軟嫩多汁,用來做烤肉或牛扒就最美味不過!Cube Roll 包括以下切割:
- Standing Rib Roast
- Rib Cutlet(Rib Eye 肉眼)
- Tomahawk 斧頭扒
- Scotch Rillet Roast
- Scotch Fillet Steak
穀飼牛肉眼牛扒整法
要煎靚穀飼牛肉眼牛扒其實唔難,只要跟住以下步驟,你都可以煮到完美穀飼牛肉眼牛扒:
首先將穀飼牛肉眼牛扒沿牛筋紋理切好,輕輕沖洗牛扒後,用廚房紙吸乾血水同水份;
用黑胡椒、海鹽將牛扒兩面調味,靜置10分鐘,等肉眼牛扒吸收調味料;
落適量橄欖油喺易潔鑊,再用中火等待油鑊變熱;
油鑊變熱後,將肉眼牛扒煎2-3分鐘,記得兩面都要煎,等肉眼牛扒可以平均受熱;
上碟後,先靜置5分鐘,等肉眼牛扒可以吸收肉汁,食嘅時後就可以有更豐富嘅口感!
以上煮法係5成熟肉眼牛扒嘅煮法,建議如果想熟啲,可以煎耐1-2分鐘,不時切開牛扒觀察熟度。
