What's a Rump Cut?

The rump is a boneless five-muscled primal that sits between the sirloin and topside. There are two rumps per animal accounting for 3.8% of the carcase.

Extremely versatile rump can be sliced whole into rump steaks or subprimaled to reveal a range of cuts with varying textures and tenderness:

  • Rump Cap - a.k.a. Picanha, is the cut that rests on top of the rump. Because it’s not an exerted muscle, rump cap is tender with a layer of fat that flavours and moistens the meat as it cooks. Rump cap makes a tender roast, or you can slice it against the grain for petite steaks and tender stir-fry strips.
  • Rump Roast - a boneless piece of beef, cut from the hindquarter that covers the hip bone. It’s made up of 3 of the 5 rump muscles that do little work resulting in a mix of textures and levels of tenderness. Full of flavour, rump roast is succulent and tender when roasted or diced for casseroles.
  • Rump Steak - made up of 4 of these muscles with differing tenderness. A great all-rounder steak, rump is a little firmer in texture and are perfect for a variety of cooking methods.

Forgot to thaw dinner and now you’re thinking hot water or leaving it out on the counter might save the day? Nope, not safe! These methods can lead to foodborne illness. Keep your Frozen Rump Cap at a safe temp during “the big thaw.” They’re fine frozen, but once they warm up past 4.4°C, bacteria can start multiplying.

Never thaw perishable foods on the counter or in hot water, and don’t leave them out for more than two hours. Even if the center is still frozen, the outer part can hit the “Danger Zone” (4.4 ~ 60°C) where bacteria thrive.

Best way to thaw? Plan ahead and use the fridge to keep it at a safe 4°C or below. You can also use cold water or the microwave. If you’re in a rush, cooking straight from frozen is cool too, just takes a bit longer.

Refrigerator Thawing: Plan ahead, it takes time. A big turkey needs a day for every 5 pounds. Smaller stuff like ground meat or chicken breasts need a full day. After thawing, you’ve got a couple of days to cook most things, and red meat can last 3 ~ 5 days. You can refreeze without cooking, but quality might drop.

Cold Water Thawing: Faster but needs attention. Keep food in a leak-proof bag, change the water every 30 minutes. Small packages thaw in about an hour, bigger ones in 2 ~ 3 hours. Cook immediately after thawing.

Microwave Thawing: Quick but cook right after thawing. Some parts might start cooking during the process, hitting the “Danger Zone.” Always cook immediately after thawing.
